Restaurant Ordering Red Wine Etiquette
In a western style restaurant, order a bottle of wine to drink. There are many etiquette matters to be clear before coming. Otherwise, in addition to making a fool of oneself, it may also be "stupid" by the restaurant.
Here are some of the main points you need to know from the beginning.
一、查询是否有WineList。想点葡萄酒但又发觉餐桌上并没有葡萄酒牌winelist或酒水牌beveragelist上没有葡萄酒时,应问侍应有没有winelist。Winelist通常不会摆在餐桌上,只会待顾客查询时才拿出来,这是餐饮业的惯例──尤其对於高级的西式餐厅。
二、向侍应念出想点的葡萄酒的名称。正式向侍应点酒时,请念出葡萄酒的大概名称。何谓大概名称?通常包括三点:〈一〉、酒庄名字或品牌。如ChateauLaFrance(酒庄)、Romeo&Juliet(某法国牌子)或CartaVieja(某智利牌子)。〈二〉、该葡萄酒的款型。出葡萄酒的款型有二大分法。(1)、以产区为准,这在欧洲尤其流行。每个产区都代表大约某一种风格,於是约定俗成,以产区为种类。(2)、以葡萄的品种为类,这在新世界──亦即非欧洲国家尤为流行。不同的葡萄品种带来不同口味的葡萄酒。(3)、以系列名称为主。以中国最出名的酒庄张裕为例,出产了数个档次的红酒,最高级的叫高级解百纳干红葡萄酒,次者为干红葡萄酒。留意一点,系列名称可能包括葡萄品种。〈三〉、年份。较专业的饮酒者会视同一品牌不同年份所出的酒为不同的酒。此做法尤其适合於欧洲葡萄酒,原因欧洲每年之天气极尽不同,因而所出的酒不同年份可能有颇大的质量差距,风格也可能是年年不同。

三、开瓶前确定该瓶葡萄酒。点酒後,侍应便会取出该支葡萄酒让你过目──侍应不可在顾客未察看该瓶葡萄酒便开瓶。因为顾客可以:〈一〉、察看葡萄酒是否本人所点的酒。规矩是,如果你点了头意示侍应可以开瓶,即使最後你发觉侍应给错了酒你,你也不能反悔。〈二〉、观察葡萄酒的贮藏状态,如酒塞有没有严重的凸上──这表示木塞得不到湿润,不能在涨大的情况下防止空气氧化葡萄酒,如有这情况顾客可叫侍应换另一瓶状态更好的。
四、亲眼看着酒开瓶。当顾客示意接受该瓶葡萄酒後,侍应应在顾客面前开酒,原因可能是防止餐厅方面混入较低档次的酒入瓶内。如果该瓶为白酒或香槟,侍应应於开瓶前把酒放入冰桶内。如果顾客不知要雪多久,可请教侍应──假如你对他有信心。
五、让红酒「呼吸」及试酒。开瓶後,红酒应先「呼吸」空气一会,以让进行氧化作用,到达饮用阶段。经过「呼吸」的酒,侍应会倒入约等於一小口份量的酒进顾客的酒杯。此时你要做的是「试酒」,试酒的过程应为(一)、拿起盛着葡萄酒的酒杯,向外倾斜,首先看看酒是否有如木屑的东西,这些东西可能会影响酒的品质。再来看看酒的颜色。已成熟的酒(低下档的轻清型葡萄酒例外),外围酒边带褐黄色,而里面的酒色泽较深。未成熟(可贮藏更久才饮用)的酒内外皆多呈紫红色。(二)、拿起酒杯,向内摇晃(右手者即逆时针,左手者即顺时针)。(三)、然後把酒向内倾斜,低头用鼻去嗅,味道香浓当是好徵兆。(四)、呷一口酒,不要太多,也不要太少,转动舌头去体会,在餐厅用酒时,这时是决定你是否接受此瓶酒的时候。处理不当的酒,可能带有霉腐味,这时你可以要求侍应「退货」。
